Surrounded by Piles/ Nag Champa Town






Ok, can I just ask, does anyone feel like all they do is clean their house? (Between cooking and sleeping and watching Law and Order, that is). I mean, every single weekend, my house is a god damn mess again! Dishes in the sink, like at least 2 loads of laundry, bathroom out of sorts, piles of mail on the dining table, broom the floors and vacuum the carpet... I mean all manner of chores. I am ONE PERSON. I live alone! (well, kinda not sometimes) but how could I create such chaos, only for myself to have to undo? I feel like the piles are trying to take over my life.. they are really trying to get the best of me, and I am letting them.

Wild Night is Calling







Saturday night was full of treats and surprises. One, was that Mansi picked me up and drove allll night! from 6pm to 3am. That's like the best thing ever in LA. I barely took any pictures all night, but I want to tell you about some stuff that happened. We had 3 openings to go to, and well, we didn't get to them all because the first one at Space15Twenty had like a full bar and an Umami Burger next door so we got pretty situated there. A little later we ventured to Highland Park for a bonfire party. We got there too early I think.. either way it wasn't too crazy yet, and then Mansi got this call from Aimee that there was a dance-off going on Downtown. So we were like "oh, man we are so there". When we arrived we realized we'd spent all our cash on drinks and burgers and so then we somehow managed to talk the door guys into letting all 4 of us in for free or for a total of $5 or something ridiculous. We went into in this massive arena, and there was this big two-teired judges table with about 20 people judging this big dance contest. We were standing in a big crowd circling around the finalists. The music was great, and when the contest was over everyone just started a dance party and we danced for what seemed like so long. I wanna go to this thing every weekend! I want to know what it's called and where I was. By the time it was all over, we left and stopped for burritos at Midnite Taco on Santa Monica and the food felt so good in our exhausted bellies.

Rock And Roll High School, Part 1








I went to an event at the new public arts high school in Los Angeles, which is called Public School #9. It's right on Caesar Chavez on the border of Echo Park and Chinatown, and architecturally it's really something else, for a high school. The coolest thing ever happens at this place too they have an open mic lunch hour every Friday!! And kids can totally get up and play music or say stuff or do spoken word or whatever they want. Everyone gets on the lunch tables and goes nuts and cheers and dances. It's super rad, like they have such a voice. I am totally into public high school #9.

The Flavor Arsenal:

Maple syrup
Sriracha
Dijon mustard
Red wine vinegar
Thai fish sauce
Freshly grated cheese- Parmesan, Pecorino Romano, or Manchego
Anchovies or anchovy paste
(any of the above three can be used in place of salt)
Lemons! Meyers are the best
Fresh herbs, Thyme and flat-leaf parsley are my absolute faves
Freshly cracked pepper- obsessed with my Peugeot pepper mill
Garlic, pounded into a fine paste in a mortar & pestle
Fennel, fresh bulb and frond -or- dried seed, freshly ground
Pancetta, prosciutto or bacon
Shallots, shallots, shallots... Scallions are helpful too
Olive oil, the best quality you can afford

These are my secret weapons. I almost always have all of these things in my kitchen and can flavor just about anything like a champ, or add a layer of dimension to cooking even the simplest things. You can pretty much marinate, roast, dress or pan fry whatever proteins, veggies or greens you have with these items or combinations thereof. And of course, I'll show you what I mean!

So like say you have some sweet potatoes hanging around. Or a bag of brussels sprouts. Toss them (alone or together) in a bowl with olive oil, maple syrup, garlic, a shallot and some fennel. To be just a bit more indulgent, add some chopped pancetta or bacon. Pop those bad boys into a 400 degree oven for 30 mins. You will love yourself for doing so. Got some greens? You can probably make like 5-8 different vinaigrettes with the weapons. For example, here are 3: red wine vinegar, smashed garlic, olive oil, salt & pepper make an excellently simple dressing for red or green leaf lettuces... To that, you can add some maple syrup and dijon mustard for more depth and sweetness, for say, wild rocket or baby greens. Mix red wine vinegar, lemon juice 2 smashed cloves of garlic, a couple chopped anchovies, olive oil, an egg yolk and some grated parmesan? You've got like the most killer Caesar ever. And let me tell you what: home made croutons will change your life.

Some musings on my two favorite asian weapons. This past weekend I made a spring risotto for some vegetarian/pescetarian friends, which could have been pretty flat considering I had to substitute the deep salty chicken stock often used in cooking risottos, with vegetable stock. I used Thai fish sauce to get a bit of a bolder flavor.. and let me tell you it was deeeee-friggin-lish. Fish sauce is an incredibly under-used and under-valued condiment. Anchovies too, which are actually what thai fish sauce is made from, and is then fermented. It worked especially well with this dish, since I served the risotto with grilled shrimp, which themselves were marinated in a simple mixture of olive oil, fresh Meyer lemon juice, a chopped scallion and pepper. Sriracha, (bright red chili sauce with the bright green spout and the rooster on the bottle) is amazing on anything in a Vietnamese noodle bar, Pho, eggrolls, etc, but is actually the secret ingredient in my meatloaf, taking the place of ketchup. It is also super delicious in grill marinades, vegetable stir frys and on scrambled eggs and steamed broccoli.

A few last tips while I'm being a total food snob (but seriously, I am trying to help you!) Olive oils taste very different from each other, and cheap ones are often too strong... If you use a lot of olive oil it's seriously such a good idea to buy good quality, I mean it's only a few dollars more. Bragg's Organic Extra Virgin and Sur La Table's (from France) are my personal favorites, run about $15 /bottle, and a little goes a long way. Same kind of idea goes for maple syrup, which I seriously use so god damn much of I mean I am always slipping it into so much of what I make. Maple syrup and lemon juice are a winning combination. Heck, you can live off the stuff and nothing else for up to ten days! (Haha, see: the Master Cleanse). On the contrary, my very favorite Dijon mustard is $1.99 a jar, the Trader Joe's French Village Dijon, and it's actually imported from France. Even cheaper than that, if you live in Los Angeles, you know someone with a Meyer lemon tree. Trust me, you do. And then they're free.

Lastly, smashing garlic or dried spices in a mortar and pestle is the only way to go. And It feels really good to do it too.

Tortilla chips, preferably Casa Sanchez
Canned pinto beans or refried beans
Already shredded cheddar/jack cheese
Jalepeno peppers
Steak, chicken or pork (anything that's around)
Salsa, also preferably Casa Sanchez

Lime

Haha So Embarrassing


The gyst: I moved this super banged up eye-sore of a dry erase board on a standing wooden frame, weighing easily 40 lbs and measuring 6ft tall, out of a room the other day for a presentation for accepted students at school. I forgot to put it back in the room, and it got taken from the hall. Today this lady from school comes on a rampage looking for it and trying to figure out who is responsible and was like so aggressive (I laughed and I don't think she appreciated this) because academic classes need it, and how are they gonna teach without it, etc. Then she sends me this email saying I have to pay to replace it. The laughs escalated at this point. The solution was I had to email the whole CalArts community asking if anyone knew it's whereabouts, and if you know me, you can imagine how difficult this was to do without being completely sarcastic and making the situation into the mockery that it is.
